Playing with a little chicken.

Today we decided to play with a little chicken. It started with my son and wing man Aaron prepping and slow smoking two chickens with our basic Mexican rub. If you don’t want to make your own Mexican rub, pick up a pack of taco seasoning at your local grocer.(for slow smoking chicken see “Chicken Three Ways”  http://wp.me/p2hcyM-1B )

Once the chicken came off the UDS we pulled it into thin shreds and added our own “house” sauce.

After adding smoke to our Weber kettle grill.The fun began. We started out with “Mexican Pizzas. Simply adding chicken, jalapenos, and cheese to flour tortillas.

 

Then we carefully dropped them onto the grill.

Until the cheese was melted and the tortillas were crispy.

While those were resting we then made some BBQ chicken burritos. We simply made your basic chicken burrito.

  

Then placed them on the grill, until the shells were well browned and the cheese melted.

Let me finish by saying there is nothing like the taste of a smoked chicken pizza or burrito. I wish I could of added grilled peppers and onions, however when the wife asked what I needed from the store…. well….. I kind of forgot to mention those, but it was still a taste explosion. A marriage between cheese and smoke is always a good thing.

    Oh, this looks wonderful. I like when Greg makes the burritos like you did, and then adds bbq to the tops of it! yummy! I want this for my birthday dinner! 🙂
