If you remember right in my last blog post I posted about rib tips, what they were and how to smoke them. http://wp.me/p2hcyM-5c Well we have the tips all smoked up, now what? The list of great things you can do with tips is only as short as your imagination. My original thought was the tried and true tip sandwiches, however I changed my mind on the way home form work. With these tips I decided we would make grilled BBQ Mexican pizzas.
We began by mixing the tips with some of our favorite homemade BBQ sauce and letting them simmer.
Next we set up our Weber kettle grill for an indirect cook, and added just a touch of smoke.
While the grill was getting it’s heat and smoke on. We began prepping the pizzas, using leftover grilled peppers and onions that we cooked Sunday, on top of flour tortillas along with the BBQ’d rib tips.
All that’s left to do is add cheese and drop them on the grill.
Now simply cook them, with the lid on, for about 3 minutes, rotate and cook about another 1 1/2 minutes. Or until the crust is lightly browned and crispy and the cheese melted.
Yea, I’m glad we didn’t toss those tips out when we trimmed the ribs, and I’m definitely glad I decided not to go with the same ol’ same ol’ rib tip sandwiches.
